Short answer

For a U.S. or Canadian-style label, start with total carbohydrate and subtract dietary fiber once. If the product lists erythritol separately, many people subtract it too. Treat other sugar alcohols as a range unless you have a reason to use a specific method.

The familiar formula is net carbs = total carbohydrate - fiber - sugar alcohols. It looks exact, but the last term is not one uniform substance. The American Diabetes Association says the equation is not entirely accurate because fibers and sugar alcohols differ in how much they are absorbed or metabolized.

That limitation is visible in recent community discussions. One r/keto commenter put the distinction plainly: “Metabolic state is not a label.” Another recent thread debated whether processed low-carb breads and sweets deserved the same simple subtraction as fiber from whole foods. Those comments are anecdotes, not clinical evidence, but they reveal the label-reading problem people are trying to solve.

The net carb calculator handles that uncertainty by showing a conservative estimate, a middle estimate, and the lowest result produced by subtracting all entered sugar alcohols.

First check which label system you are reading

On a U.S. Nutrition Facts label, the FDA says Total Carbohydrate includes dietary fiber. If the label shows 24g total carbohydrate and 8g dietary fiber, the basic result is 16g after one fiber subtraction.

UK and EU-style declarations work differently. The applicable regulation defines carbohydrate as carbohydrate metabolized by humans and defines fibre separately. If a UK label lists 16g carbohydrate and 8g fibre, do not calculate 16 - 8. The 16g carbohydrate line already excludes that separately listed fibre.

This difference explains many contradictory online formulas. The same instruction can be correct for one label format and wrong for another. Check the spelling and layout, but rely on the label's regulatory market and definitions rather than spelling alone.

Worked U.S. example: a snack with mixed polyols

Suppose one serving lists 24g Total Carbohydrate, 8g Dietary Fiber, 4g erythritol, and 6g other sugar alcohols.

  1. Start with 24g Total Carbohydrate.
  2. Subtract 8g Dietary Fiber. That leaves 16g.
  3. Subtract 4g erythritol. That leaves 12g.
  4. Decide how to handle the remaining 6g of other sugar alcohols.

If you count the other sugar alcohols fully, the conservative net estimate is 12g. Subtracting half gives a middle estimate of 9g. Subtracting all of them gives the lowest estimate of 6g.

That 6g to 12g spread is more honest than claiming that 9g is biologically exact. The middle value is a calculation convention. It is not a measured digestive response.

Sugar alcohols do not share one calorie factor

FDA compliance guidance lists different energy values for different polyols. Erythritol is assigned 0 calories per gram. Mannitol is 1.6, isomalt and lactitol are 2.0, maltitol is 2.1, xylitol is 2.4, sorbitol is 2.6, and hydrogenated starch hydrolysates are 3.0 calories per gram.

Those figures explain why “subtract every sugar alcohol” and “subtract half of every sugar alcohol” are both rough shortcuts. A combined sugar-alcohol line may also hide the amount of each ingredient. Read the ingredient list. If it names several polyols but gives only one total, a precise adjustment is not possible from the package alone.

Do not use the calculator to predict gastrointestinal tolerance. Polyols can affect people differently, and a gram calculation cannot tell you how a particular food will feel.

Allulose is not a sugar alcohol

Allulose is a sugar that the FDA allows manufacturers to handle differently from traditional sugars on the label. It remains part of Total Carbohydrate, but it may be excluded from Total Sugars and Added Sugars. FDA guidance also permits 0.4 calories per gram for calorie calculations.

Some manufacturers subtract allulose in a printed net-carb claim. If allulose is clearly listed as a separate gram amount, you can reproduce that manufacturer's arithmetic. Keep it separate from the sugar-alcohol field, and do not assume an unlisted amount from the ingredient list alone.

Use total carbohydrate when the decision needs it

Net carbs is not an FDA-defined nutrient claim. A package can print a front-of-pack number based on the manufacturer's method, while the regulated Nutrition Facts panel still lists Total Carbohydrate, Dietary Fiber, and sometimes Sugar Alcohol.

The ADA recommends total carbohydrate for blood-glucose decisions because the net formula cannot describe the effect of every fiber and polyol. If you use carbohydrate counting for insulin, medication, medical nutrition therapy, or a prescribed ketogenic diet, follow your clinician's method rather than this general-purpose estimate.

For ordinary food journaling, record enough context to revisit the number: product name, serving amount, total carbohydrate, fiber, named sweeteners, and the method you used. Mori entries are editable, so a label estimate can stay useful without pretending to be permanent.
