Put the oil container on a gram scale, note its weight, dispense the oil, then weigh it again. The difference is the oil used. Multiply those grams by calories per 100g, then divide by 100.

When teaspoons and tablespoons are good enough
A spoon measure is acceptable when you actually fill a measured spoon and pour that oil into the food. It is weaker when you free-pour into a pan and later describe it as "about a tablespoon." The eye tends to underestimate oil once it spreads across a wide surface.
Use grams when the meal repeats, when the pan is large, when the oil amount changes your decision, or when you are trying to diagnose a weekly calorie gap. Use a spoon estimate when the amount is small, the meal is one-off, and the rest of the log is already approximate.
Butter, ghee, and oil blends need the same treatment but not the same calorie number. Use the product label or a matching food database entry. Do not reuse the olive oil default for a spread, spray, or flavored product unless the label supports it.
If you cook with a measuring spoon, scrape the spoon into the pan and log the spoon amount. If some oil stays on the spoon, the difference is usually too small to chase unless you are repeating the same meal every day. If you only have spoon data, write the basis in the log: measured teaspoon, measured tablespoon, label spray, or free-pour estimate. That note helps you compare the same meal later without pretending every oil entry came from a scale.
A zero on spray oil needs context
Under 21 CFR 101.60, a U.S. label may use a zero-calorie claim when the food contains less than 5 calories per reference amount and labeled serving. FDA's serving-size table lists 0.25g as the reference amount for spray-type fats and oils.
That does not mean every spray session contains zero calories. Check the gram amount behind the label and weigh the can before and after if you use more than the labeled serving or want a repeatable number.
Put the oil into the whole recipe first
When oil coats a tray of vegetables or a pan of chicken, add its calories to the complete recipe. Then divide by equal servings or by each portion's share of the finished batch weight.

Restaurant oil is a different problem
At a restaurant, you usually cannot know the oil weight. Do not pretend you can recover a precise number from the shine on the plate. Instead, log the visible facts: grilled, sauteed, fried, oily sauce, creamy dressing, or dry cooked. Then keep the entry editable.
When a chain publishes nutrition information for the exact menu item, use that before a generic estimate. When no menu data exists, choose a range and review the largest uncertainty. For many meals, cooking oil, dressing, cheese, nuts, and sauce change the number more than the vegetable or lean protein choice.
